Blame it on the weather or just staying home so long, but I crave comfort. Beer bread seems to be the thing to make today. With a lone bottle of beer in the refrigerator, I took it for this recipe before my husband or kids could steel it. This was by far the easiest quick bread to make and it goes with anything. Put the dry ingredients together, pour in the beer, mix, put in a greased loaf pan, pour melted butter on top and pop it in the oven for an hour. It only took five minutes to prepare. Crunchy crust and soft inside with a hint of beer smell, what else could you ask for on a rainy day with a glass of wine and cheese if you have it. The other dish I made was garlic smashed potatoes. A cross between baked and mashed potatoes, if you can imagine it. Boil small potatoes until fairly soft and prepare your skillet. Mince a half of a head of garlic and stir fry in olive oil. When potatoes are done, place on the garlic and oil and smash with a potato masher and just let it brown. When brown on one side, flip it and brown on the other and add salt, pepper and herbs of Provence. Enjoy!
