I have lost count of the amount of days I have been in the house. I have chosen to make two special recipes. The first one is quick spinach pie. This is a wonderful recipe I make every Christmas Eve and everyone loves it, especially my daughter. I really wanted to make it for her. It can be eaten for breakfast, lunch, dinner or snack. Once it's done, I cut it into pieces and it gets eaten so quickly. This recipe is super simple to make: puff pastry, spinach, eggs and cheese. The spinach filling is spread between two pieces of rolled out puff pastry and put together like a sandwich. The next recipe is something I have never made before, but that's what a cooking adventure is all about! Since I have many leftover Easter eggs, I need to do something with them before they go bad. I found a recipe for pickled eggs which preserve the eggs and are supposed to taste better the longer they are kept. So I'm going to make them. First, I made the pickling brine and cooled it off. Then, I put spices and peeled eggs in clean jars and poured over the cooled pickling brine. They are preserved in the refrigerator and they get better as they age. I'll keep you posted...
