I was very adventurous today. I made black bean aquafaba pavlova with peaches and banana fritters. Aquafaba is the liquid from canned beans. In my case, I used a can of black beans for chili and used the leftover liquid to make a pavlova. Aquafaba is a vegan substitution for egg white and can be whipped as seen below. The liquid needs to be beaten with an electric mixed for several minutes, but will whip up like egg whites. Then, it is baked for an hour and a half in the oven for 300 degrees. Now, this did not taste as good as it looks. The black bean gave it a strong flavor after it was baked. The best aquafaba is from chick peas so I will try a pavlova from chick pea aquafaba another time. Also below is banana fitters. I am tired of banana bread so I mashed two bananas and added 4 tablespoons of flour a a little sugar and fried them up in a little oil. Then I sprinkled confectionary sugar. It was a sweet breakfast instead of pancakes. Yum.
