I was almost done making bread recipes when I found this enticing recipe, Mediterrean olive bread. Filled with a variety of olives, lemon and thyme, it sounded like the perfect combination. Until this bread is finished, I am going to put off any attempts at a low carb diet. This recipe uses only 1/4 teaspoon of yeast, which is perfect because I'm almost out. Because it uses less yeast, it takes more time to rise. I have to wait 8 to 24 hours. I remind myself it will be worth it. With anticipation, I took the two loaves of bread out of the oven and gently tapped them. It sounded like a hollow drum, that's when I know, it's done and it's gonna be great. I was right. A perfect combination of olives, lemon and thyme. I'm taking a trip to Tuscany. See you all later.
