Chris and I drove to a smaller grocery store in Sussex county where there are statistically less people with Covid. Nevertheless, we wore the homemade face masks I made from Chris' old shirts. Since it was so hard to breathe, we rushed through the store so we could get out. After I got to the car, I realized I bought two bags of cornmeal. Needless to say, I will be making dishes using cornmeal. So, I found this great recipe of English muffins, and who doesn't love those! I also used cornmeal was to make almond biscotti, which were out of this world. Perfect with espresso on a rainy Saturday afternoon. Another delicious use for cornmeal are the giant corn muffins I made. After coming out of the oven, I quickly wrapped them in saran wrap and they stayed fresh for a few days. Lastly, I found a half bag of frozen strawberries in the freezer so I made homemade strawberry jam to go with the English muffins and corn muffins..
